Peruvian Pompona Vanilla Explore a new world of flavour

Explore a new world of flavour

With Peruvian Pompona vanilla, we invite chefs and artisans to explore an unexpected new flavour territory.

Precise use to preserve its balance

Cultivated in the heart of the Amazon, Peruvian Pompona vanilla draws its identity from a unique environment. It grows slowly, nurtured by a protected biodiversity.

Pompona vanilla does not seek to replicate conventional norms. Where Planifolia offers sweetness and roundness, Pompona reveals a woody palette, with spicy, leathery, and occasionally cocoa notes. Its fleshy beans unveils an elegant bitterness, reminiscent of dark chocolate or wild spices.

Its use requires precision: infusion times should be shorter than for other varieties to preserve its balance and finesse. When mastered, it delivers remarkable aromatic depth.

...Interpreted by our chefs

To reveal the full potential of this "original" variety, several chefs have imagined unique creations featuring Peruvian Pompona vanilla.

"The Swan" by Julien Perrinet

Choux pastry, vanilla mousseline, caramel, and vanilla namelaka cream.

Pompona vanilla doesn't just reveal itself; it asserts its presence. It offers a powerful, full-bodied, and generous aroma with a remarkable length on the palate. It is a profile that is more complex and nuanced than anything we have known before.

Used in a short infusion to preserve its finesse, it expresses itself beautifully in ganaches montées (whipped ganaches), low-sugar creations, or paired with dark chocolate.

Julien Perrinet, Executive Pastry Chef for Hyatt in Asia-Pacific, shares his experience:

"It was love at first sight. The aroma is powerful, full-bodied and generous. I loved the first test in a whipped vanilla ganache: a velvety, almost milky sensation and a more complex, nuanced taste. It is an incredibly elegant vanilla with a remarkable length on the palate."

"Andean Treasures" by Tristan Rousselot

Our corporate chef, Tristan Rousselot, has explored the tension between bitterness and indulgence in his creation, Andean Treasures.

Chocolate and vanilla crémeux, cocoa biscuit, corn and quinoa granola, cocoa tuile and cocoa nib and Pompona vanilla ice cream.

"I have a particular affinity for Peruvian Pompona vanilla; it is remarkable for its generous size and unique character. It develops notes that give it a rare depth. A vanilla with real personality, both intense and elegant, that elevates any creation."

"Vanilla fromage blanc, mint and Shine Muscat grape" by Julien Perrinet

An ethereal interpretation that plays on the contrast between the woody strength of the Pompona and the botanical vibrancy of the ingredients.

Matcha tea shortbread, Peruvian Pompona vanilla fromage blanc mousse, mint jelly, fresh Shine Muscat grapes and edible violet orchid.

In this creation, the Pompona vanilla pod unveils a wild and woody aromatic profile, delivering an elegant, bold and persistent bitterness.
