Vanilla is at the heart of our new summer collection, A frozen journey. Through three exceptional terroirs, we explore the aromatic richness of this iconic ingredient within unique ice cream creations. A sensory journey to discover the full depth and character of our varieties.

Aloalo Totem – Origin Bourbon Madagascar

 

The journey originates in Madagascar. It is here that the Planifolia vanilla of Bourbon Madagascar origin reveals its true power. Intense and woody, it asserts a remarkable balsamic character. These generous beans set the tone to authenticity and depth.

 

To represent this variety, our Corporate Chef, Tristan Rousselot, has selected the Aloalo totem, a traditional funerary sculpture of the Mahafaly people, serving as a symbol of memory and a profound connection to the Malagasy soil.

For a complete recipe, Tristan chose the local ylang-ylang flower, soft and exotic, paired with a flowing caramel heart.​

Tiki Totem – Origin Tahiti​

 

The Tahitensis vanilla from Tahiti captivates the palate with its fruity sweetness and delicate notes of aniseed and powder, making it immediately recognizable. A vanilla that surprises, that strays from the beaten path to reveal something more delicate, almost secret.​

 

The Tiki totem, an iconic figure of Polynesian heritage, embodies protection and sacred power.

 

This totem holds a coconut sorbet and a flowing caramel heart, revealing the soft, fruity character of Tahitensis vanilla.

 Tumi Totem – Origin Peru 

Final stop: the Peruvian Amazon.

 

The Pompona vanilla from Peru remains the wildest of these varieties. Bitter and woody, the Pompona is so intense that it requires only a short infusion to fully express itself.

 

To close this journey,  Tristan_Rousselot chose the Tumi totem: the ceremonial knife of Andean civilizations, a symbol of rigor, transformation, and connection to the earth and to one's origins. 

A creation that mirrors the variety it embodies: raw and intense. The Pompona doesn't soften easily. It has to be worked and tamed.​

 

This creation is paired with corn and a molten caramel heart, to temper its itensity.
