Masterclass by Dimitri Esposito Masterclasses in Dubai and Abu Dhabi with Truebell Food

In October, we held two masterclasses alongside our distributor Truebell Food and our partner ABC Ventures: the first on the 6th at the Callebaut Chocolate Academy in Dubai, the second on the 9th at École Ducasse Abu Dhabi Studio. 

Around 50 professionals attended in Dubai, and 25 in Abu Dhabi. 

Leading both sessions was Dimitri Esposito, former Executive Pastry Chef at Jumeirah Al Qasr and founder of French Touch, with over 23 years of experience across Europe, Russia and the Middle East.

Eight products, five recipes 

For these two sessions, Dimitri created five recipes using our extracts, our flavours and Caviani. 

Our orange blossom flavour scents the crémeux in Obsidian, a dark chocolate and toasted coriander seed dessert. 

In Amber, a coconut, strawberry and cinnamon entremets, our natural coconut flavour runs through the dacquoise, the crunch layer and the mousse. The mousse is lifted with our cinnamon extract. 

Noor is an avocado ice cream on a stick, dipped in milk chocolate. It pairs our natural hazelnut flavour with our cardamom extract, a spice widely used in Gulf pastry. 

Verde is a pistachio travel cake filled with whipped ganache, made with our natural pistachio flavour and Caviani. 

Finally, Velvet is a layered chocolate bar: salted cinnamon caramel, a crémeux infused with our cold brew coffee extract, shortbread and a Caviani vanilla chantilly. 

One range, five formats 

Entremets, ice cream, travel cake, bar: five very different formats that show how versatile our products are in professional pastry.
